Basil and Sun-dried Tomato Bread
1 1/4 cups warm water 1 (1/4-ounce) package active dry yeast or 2 1/2 teaspoons active dry yeast 1 tablespoon granulated sugar 1 tablespoon vegetable shortening, melted 1 1/2 teaspoons salt 3 1/2 cups all-purpose or bread flour 1 large egg, beaten 1 tablespoon dried Basil 1/3 cup chopped sun-dried tomatoes (cut into small pieces) Pour warm water (105° to 115°F) into a large bowl; sprinkle yeast over top. Stir in sugar, shortening and salt. Add flour, 1/2 cup at a time, until mixture forms a soft dough. Add sundried tomatoes and dried basil. Knead until smooth, about 5 minutes; leave covered with a kitchen towel in a warm place; allow to rise for at least 60 minutes or until doubled in bulk. Preheat oven to 350°F. Meanwhile generously grease a 9 x 5 x 3-inch loaf pan; punch down to press out air; place in pan. Allow to rise for about 60 minutes or until doubled in bulk. Slash the top diagonally in two or three places, brush with egg, sprinkle with sesame seeds. Bake for 30 minutes or until golden brown. Bread will make a hollow sound when tapped.
Chicken with Basil Sauce
Ingredients:4 lrg Chicken fillets CRUMB TOPPING 1 cup Bread crumbs, fresh 1/3 cup Parmesan, grated 1 tbl Parsley, chopped 1/4 lb Bacon 3 oz Butter 2 x Garlic cloves 2 tsp Worcestershire sauce 1/2 tsp Mustard, dry BASIL SAUCE 1/2 cup Oil 1/4 cup White vinegar 1 x Garlic clove, crushed 1/2 cup Cream 1 x Egg yolk 1 cup Basil leaves (fresh), finely choppedMethod: * Preheat oven to 375 degrees F. Combine bread crumbs, cheese and parsley. * Saute chopped bacon and drain on absorbent paper. Add the bacon to the bread crumb mix. This is the crumb topping for the chicken. * In a pan, melt the butter, then add the crushed garlic, Worcestershire sauce and mustard. Mix and heat through. Coat the chicken fillets with the butter mixture by dipping them in the saucepan. Arrange in a shallow, ovenproof dish. Press the bread crumb mixture on top of the chicken pieces to provide a crumb topping. Bake uncovered for 20 to 25 minutes. * While the chicken cooks, make the basil sauce: in a saucepan combine all sauce ingredients except the egg yolk. Stir until heated and then add the egg yolk, stirring until thickened. Do not boil. Pour the hot sauce over...
basil lemon pork chops
BHi friends, hope you enjoy this receipe for today!!This may be the world's easiest marinade with a secret ingredient you won't believe. What will give the dish even more zest is grilling melon slices along with the pork chops. Be sure to brush some of the marinade on the melon, too. 1 12-ounce can frozen lemonade concentrate, thawed 1/2 cup basil leaves, cut into thin strips 4 tablespoons olive oil 1 or 2 cloves garlic, crushed 4 loin pork chops, at least 1-inch thick Mix the first four ingredients. Reserve 1/4 cup of the marinade to brush on while grilling. Pour the rest of the marinade over the pork chops, and refrigerate them for 2 hours, turning once in the process. Grill them for approximately 20 minutes, turning them once and basting them. Serve with the melon wedges and riceServes 4.
Artichoke and basil pasta salad
6 ox uncooked rosamarina or orzo 2 med. tomatoes, seeded, chopped 1 med. cucumber, chopped 1 (14 oz.) can artichoke hearts, well dreained, coarsely chopped 1/2 cup finely chopped fresh basil 1/4 cup white wine vinegar 2 tbl. extra virgin olive oil 1 tsp. salt 1/4 cup grated parmesan cheese Cook rosamarina to desired doneness, omit salt and oil. Drain, rinse with cold water to cool and drain well. Meanwhile, in a large bowl, combine all remaining ing. and toss gently. Add cooled rosamarina, toss gently to mix. Serve imm. or cover and refrig. for up to 24 hours before serving. Makes 8 (3/4) servings
Tortellini with tomato basil sauce
Try it and let me know what you think!Ingredients 2 teaspoons olive oil 1 large onion, chopped 15 ounces chopped, canned tomatoes, undrained 12 ounces frozen cheese tortellini 1/4 cup chopped, fresh basil 2 tablespoons freshly grated Parmesan cheese salt to taste freshly ground black pepper Cooking Instructions 1. Bring a large pot of salted water to a boil. 2. In a large skillet, heat the oil over medium-heat. Add the onion and cook, stirring, until well browned, about 10 minutes. Add the tomatoes and their juices and bring to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, until the sauce is slightly thickened, about 5 to 10 minutes. Season with salt and pepper. 3. Meanwhile, cook the tortellini until al dente, about 5 minutes. Drain and transfer into a large bowl. Toss with the tomato sauce and basil. Adjust the seasoning with salt and pepper. 4. Sprinkle with the Parmesan cheese and serve immediately.

Addicted to Garlic and Basil
this is not really funny. I go on these binges where I am eating unreal amounts of raw garlic...like 4 smashed cloves on my bread or 1 bulb, smashed mixed with pasta.. On other days I eat Basil like there's no tomorrow. I mean boxes of Basil...I rip the leaves of the stems, stack them and then eat them (preferably with Garlic) on bread..or make a pesto with 3 bags of Basil....Sometimes I have to eat Garlic all night..I mean from 7 pm until I go to bed..it is like an addiction, I just can not stop.. Seriously, does anybody else have those cravings and what could that mean? This is not a joke..(thank do, my husband really doesn't care about the smell)
Grilled Scallops with Ham and Basil - Healthy!!
Try it out and let me know what you think!Ingredients 18 medium scallops, about the diameter of a quarter 1 1/2 chipotle pepper, roughly chopped 24 basil leaves 1 1/2 cloves garlic, minced 1 tablespoon olive oil juice of 3 limes 3 slices ham, cut into eighteen 1" strips Cooking Instructions 1. Place the chopped chipotle, minced garlic and 6 whole basil leaves in a microwave-safe bowl. 2. Add the olive oil to the bowl and microwave on low heat for about 2 minutes to produce flavored oil. Let cool. 3. Marinade the scallops in half of the flavored oil and half of the lime juice in the refrigerator for one hour. 4. Pre-heat the grill. 5. Lay the 18 strips of ham out on a work surface. Place a basil leaf on top of each strip of ham. Place a scallop on top of the basil and roll the ham and basil around the scallop. 6. Place each wrapped scallop on the grill and cook for 1 to 2 minutes on each side. The scallops are done when they are firm to the touch but not rubbery. 7. Remove from heat, sprinkle with the remaining flavored oil and lime juice.
My New baby persian Basil
Good evening everyone, As some of you know i lost my cat Buttons over 2 months ago to kidney failure he was only young. I have just got back from holiday after a nice rest, well as much as a rest that you can get with 2 kids !! And i have just adquirred my new baby, he's 6 weeks old doll face peach persian and absoluelty adorable, i have named him Basil on top of which the kids have added Razzle Dazzle!!! you He is very naughty and when you think that kittens normally sleep more than play...wrong he plays non stop for 3 hours and sleeps just half an hour, he has more toys than our local pet shop, but fingers and toes are his favorite!! Anyway here's a photo for you all. I do have him on special persian kitten dry food and he has a little bit of kitten cans for extra treats. If any of you have full breed persians i would love to hear from you.And p.s a small note to all my friends now my holidays are over i will get down to some serious mylot discussions and replies and will try and catch up with all your posts that i have missed over the past 10 days.Bye for now xx
Chicken And Basil Toasties
Forget slaving over a stove tonight - pick up a barbecued chicken on the way home and turn it into these super tasty, super easy toasties.Ingredients (serves 4)8 slices sourdough bread 2 tablespoons olive oil 1/3 cup basil pesto 30g baby rocket 1 cup semi-dried tomatoes, drained 1 1/2 cups shredded barbecued chicken 170g bocconcini cheese, thinly slicedMethodPreheat a grill on medium-high heat. Grill both sides bread for 3 minutes or until toasted. Brush both sides of bread with oil. Spread 1 side of each bread slice with pesto. Layer rocket, semi-dried tomatoes and chicken on 6 bread slices. Season chicken with salt and freshly ground black pepper. Arrange bocconcini on chicken. Top with remaining bread slices, pesto side down. Cut each sandwich in half. Serve immediately.
